Teriyaki Salmon Bowl

Recipe

Ingredients

  • Salmon fillet

  • Soba noodles

  • Avocado

  • Edamame

  • Cucumber

  • Mixed greens

  • Sesame seeds

  • Lime

Sauce

  • Teriyaki marinade (Hot tip: buy the coconut aminos teriyaki for a healthier alternative)

Method

  1. Marinade salmon in teriyaki in the fridge for 30-60 minutes.

  2. Prepare soba noodle as packet instructed (make sure to wash all the excess starch off the soba noodles after cooking).

  3. Prepare edamame per packet instructions.

  4. Cut cucumber into slices.

  5. Cook salmon either in a pan or under the grill. Flip to either side till salmon is cooked through.

  6. To assemble put soba noodles and mixed greens in the bottom on the bowl, add edamame and cucumber. Place salmon on the top with avocado, lime and sprinkle with sesame seeds.

  7. Enjoy!!
